A charcoal-grill restaurant and cocktail bar in the old boiler house of Cham's Papieri paper mill, opened by the Zürich restaurant family behind nine other addresses in the city.
The Kesselhaus takes its name from the coal-fired steam boilers that once stood here, generating the power that ran the Papieri paper mill from 1657 onward. The industrial bones are kept deliberately intact — high ceilings, raw steel and concrete — while an open charcoal grill now does the work the boilers used to.
Run by the Segmüller family, who already operate nine restaurants in Zürich including Sonnenberg, Carlton and James Joyce, the Kesselhaus pairs a grill menu of meat, fish and garden vegetables with a cocktail bar and a terrace on Papieri-Platz. It's built as a neighbourhood restaurant rather than a fine-dining destination, with a lunch menu aimed at CHF 25–35 and vegetarian and vegan options alongside the grill. There's no takeaway.
