Zuma returns to Gstaad for a second winter, now as the restaurant of the new Fouquet's Gstaad – sushi, robata and wagyu to share.
Zuma's first Swiss pop-up ran at the Ultima Hotel Gstaad last winter. When the hotel reopens as Fouquet's Gstaad on 4 December 2026 – the sixth address of the Barrière group's Fouquet's collection – Zuma stays on, hosted for the season as the house restaurant.
The kitchen is Zuma's contemporary take on informal Japanese izakaya dining, built for sharing: sushi and sashimi, tartares, premium wagyu and dishes from the robata grill. There is a bar, and tables indoors or on the heated terrace.
**Best for:** a long, loud dinner with a group after a day on the slopes.
