Ultima Gstaad becomes Fouquet's Gstaad – the sixth address of the Barrière group's Fouquet's collection, with Zuma running the restaurant as a pop-up.
From 4 December the Ultima Hotel Gstaad and the Ultima Promenade Gstaad trade under one name: Fouquet's Gstaad, following Paris, New York, Courchevel, Saint-Barth and Mykonos. Ultima Capital keeps ownership of both buildings, while the French Barrière group runs the hotel. It stays deliberately small – 11 suites and 6 apartments, 33 rooms in all – plus a 1,500 m² private chalet in the village for up to 20 guests, with its own cinema, games room, nightclub and spa.
The restaurant goes to Zuma, which already took over the Ultima's dining room, bar and terrace as a winter pop-up last season. The exclusive pop-up brings Zuma's contemporary Japanese cooking – sushi and sashimi, tartares, wagyu and robata dishes made for sharing. The spa covers more than 800 m², with a 15-metre pool, saunas, a hammam, hot tubs and Augustinus Bader treatments.
