The Peak is the restaurant of The Ski Lodge, the boutique hotel opening on Route de la Poste in December 2026. The kitchen is run by Mario Paiva, a Peruvian-born chef who has cooked for twelve years in Peru, the United States, Bermuda, Dubai and Switzerland.
The house describes it as carrying the mood of a New York bistro, lifted by Peruvian influence, with techniques and ingredients from across the Americas – generous dishes built for a real day in the mountains rather than for show. The room keeps to the hotel's stone, wood and natural materials.
Outside guests are welcome for lunch and dinner by reservation, and for the breakfast buffet when there is space.
**Best for:** dinner after the last run, without the fondue.
