A new wine bar in Eaux-Vives from the founder of Le Tablard and the De Bleu! cheese shops, pouring natural wine with shared plates from chef Nikitas Chatziroumpis.
Martin Burrus — who built the De Bleu! cheese shops and then Le Tablard — has opened Mineral in the former Mi Food Mi Raisin space in Eaux-Vives, run day to day by general manager Mattia Baldissara.
The concept is a wine bar in the loose, unpretentious mould Burrus favours: a well-chosen list of natural and low-intervention bottles, and a kitchen from chef Nikitas Chatziroumpis built around honest, produce-led sharing plates rather than a set menu. Open Tuesday to Saturday, 5pm to midnight.
