A modern reboot of Bern's century-old Röthlisberger bakery, now serving barista coffee alongside sourdough, olive bread, almond croissants, and cinnamon buns in the Monbijou district.
Dutch entrepreneur Hugo ter Braak took over the traditional Röthlisberger bakery in 2025 and relaunched it as Coco, aiming for a younger, more Instagram-friendly take on the neighborhood bakery — without losing the craft. The opening on August 15, 2026 drew big crowds, with 1,000 free cinnamon buns gone by early afternoon.
Coco leans into quality over volume, targeting customers willing to pay a premium for well-made bread and pastry, while still supplying restaurants alongside its retail counter. It also partners with food-waste platforms Too Good To Go and Madame Frigo.
