A six-week pop-up bakery from two pastry chefs with serious pedigree, serving fried brioche, crullers and sourdough buns out of a former bike shop on Badenerstrasse.
Mauro Hegland and Mona Postlmair are the pastry chefs behind The Drip — Hegland was head pastry chef at the Dolder Grand under Heiko Nieder and later worked at Dan Barber's Blue Hill at Stone Barns in New York; Postlmair succeeded him at the Dolder before running pastry at the Sühring twins' restaurant in Bangkok and doing a stage at Copenhagen's Alchemist.
The menu runs to a dozen items: fried brioche with dulce de leche and caramel, crullers with rotating toppings, and savoury sourdough buns — think ossobuco with polenta, or a vegetable version — plus weekly specials. Coffee comes from Zürich roastery Stoll, served at a window onto the street.
The Drip has taken over a former bike shop by the Zypressenstrasse tram stop for six weeks only, closing November 1.
